Sriracha Turkey and Veggie Lettuce Wraps

Lettuce is inexpensive in the grocery store, even the organic kind. One head of lettuce yields a TON of leaves to use as wrappers for these turkey and veggie lettuce wraps. It’s a delicious meal, packed with veggies, that comes together in less than 30 minutes. I like to serve rice on the side.

Bacon Wrapped Hot Dogs

My favorite LA street food is bacon wrapped hot dogs. Oh my gosh they’re amazing. Around here, you can find late night vendors selling these little beauties, and there’s nothing like it. Bacon wrapped hot dogs are so easy to make, it’s not even really a recipe. I added mayonnaise mixed with Tapatio hot sauce, […]

Vegan Chai Banana Smoothie with Almond Milk

I love the chai tea lattes at Starbucks. The problem I have is that they’re not decaf and they don’t have almond milk. I decided to skip the coffee this morning and go with a homemade chai tea smoothie. The banana adds some vitamins, the almond milk adds some protein, and the chai tea adds […]

Roasted Vegetable Salsa

When I went to buy tomatoes to plant in my garden this past summer, the only organic ones I could find were little yellow ones. I love the little red ones, so I thought, “Why not?” My garden produced a bunch of these little yellow tomatoes, and one can only eat so many salads packed […]

Basil Kale Pesto with Almonds

I went out to the garden, and noticed our basil had exploded. Of course I could have made a whole plate of Caprese salad and eaten it myself, but I opted for a recipe that would benefit the whole family. My basil kale pesto with almonds is so good, I could eat it with a […]

Easy Homemade Flour Tortillas

I have tried several times over the years to make my own flour tortillas. They usually turned out too tough and thick. We recently went out to dinner at a Mexican restaurant that makes its own tortillas in house. They were so amazing, it inspired me to try again. I did a little Internet research, […]

Corn, Black Bean, Tomato Salad with Honey Lime Dressing

When corn is in season, it is plentiful and inexpensive in the grocery store. I love to grill it or boil it to eat it on the cob, but it’s also fun to do something different once in awhile. I love this corn, black bean, tomato salad with honey lime dressing. The dressing is also […]

Pineapple Chicken Tacos

When my family goes to the beach for the afternoon, I like to make sure I have something in the Crock Pot for dinner when we get home. The urge to stop for fast food is super strong when I’m exhausted and starving and the kids are whining about how sandy they are. That being […]

Meatballs with Green Peppers and Onions

meatballs with green peppers and onions

My family loves meatballs. I make them often because it’s a great way to stretch a little bit of meat. I sneak in the veggies and they really add great flavor. Sometimes I use turkey, but this time I used lean organic ground beef. You can use store bought bread crumbs. I freeze the ends […]

Cheesy Beef Empanadas

I grew up in the middle of Oklahoma, so you think I’d have been raised on chicken fried steak and chili. Well, we had those meals on occasion, but my parents were from other places. My dad is from the South, and apparently his mother cooked elaborate 5 course meals nightly. My mom had notions […]
