Cheap and Easy Homemade Spaghetti Sauce

We’re trying to clean out our pantry. I know the kids will always eat spaghetti, but I was out of jarred spaghetti sauce. Pretty much all the time (9.5 times out of 10) I use jarred spaghetti sauce. My favorites are Classico and Whole Food’s 365 label. Unfortunately I was out of my handy dandy jarred sauce so I had to make my own.

I scoured the Internet for a good 10 minutes and combined what I liked about several different recipes. This recipe is cheap, fast, and healthy and a great way to get veggies into kids. Blending the sauce in a blender really brings the flavors together.

Instructions
  1. Saute the onions and peppers in the olive oil until soft and the onions are translucent. Add the garlic then cook for another 2 minutes. Season lightly with salt and pepper. I like to add less than I think is necessary because as the sauce cooks down the salty flavor will intensify.
  2. Pour in the can of tomatoes, then the can of tomato sauce. Refill the tomato sauce can with water then add to the mix. Add the Italian seasoning and stir to combine. Simmer for 20 minutes over low heat.
  3. My family doesn't like the chunks of vegetables, so I blend the sauce to smooth it out. Add the sauce to a blender (or use an immersion blender if you have one.) Place a kitchen towel over the top of the blender, then blend for 30 seconds or until smooth. Pour the sauce back into the pan or use immediately.
