Roasted Sweet Potatoes

When I think of sweet potatoes I think of Thanksgiving.  In my family, we eat sweet potatoes year round.  I love to serve sweet potatoes several times a month.  Packed full of nutrients, sweet potatoes are a healthy side dish that my whole family loves.  It doesn’t get much easier than roasted sweet potatoes.  It’s basically peel, chop, add olive oil, season, bake and serve.  What’s your favorite way to prepare sweet potatoes?

  1. Preheat oven to 400 degrees. Wash and peel the sweet potatoes.
  2. Chop the sweet potatoes into 1/2 inch chunks. Keeping the sweet potatoes an even size will help them cook evenly. Note my poor job of keeping them all an even size.
  3. Add olive oil, salt, and pepper and toss with your fingers to coat potatoes.
  4. Bake for 25-30 minutes until potatoes are soft and start to turn crispy and golden on the edges.
