The BEST Banana Cake
This is the most amazing, moist cake you will ever make. It’s so delicious, and it comes together quickly and easily. The most unique part of this cake is that it bakes at only 275 degrees and then immediately goes into the freezer. It’s a little unique, but you’re able to frost and eat the cake quicker this way and it keeps the cake ultra moist.

  1. Preheat oven to 275 degrees. In a large mixing bowl, cream together butter and sugar until smooth. Scrape down sides of bowl.
  2. Add eggs, vanilla, lemon juice, buttermilk, and bananas and mix until blended.
  3. Add flour, baking soda, and salt to the bowl and mix until combined.
  4. Pour into a buttered and floured 13×9 cake pan or use 2-9 inch cake pans.
  5. Bake for 50 minutes, and then check cake for doneness by inserting a toothpick into the center. If it comes out clean, the cake is ready to come out of the oven. If not, give it a few more minutes in the oven.
  6. Once cake is done baking, place immediately in the freezer for 45 minutes.
  7. While cake is in the freezer, make the cream cheese frosting.
Cream Cheese Frosting
  1. Cream the 1/2 C butter, cream cheese, and vanilla in a mixing bowl until smooth. Scrape down the sides.
  2. Add the powdered sugar and salt. Scrape down the sides, then mix until smooth.
Frosting the cake
  1. If making a layer cake, spread half the frosting on top of one of the cake layers. Place the second layer on top, and spread the remaining frosting across the top of the cake. If making a sheet cake, just spread frosting all over cake. Enjoy!
